Odile is probably the Abbaye of Capservy’s best feature. She clearly loves meeting people, and it’s hard not to feel the same affection for her. She’ll go almost to any lengths to make guests comfortable, including putting together a good breakfast to start the day. It’s a lovely, quiet place in a very old monastery, with a pool that’s welcome in the summer heat. Carcassonne’s Medieval City and Castle are about 20 minutes away, Montolieu with its many libraries and good restaurants is nearby too, and Albi, known for its large brick cathedral and Toulouse Lautrec Museum, is about 90 minutes away. Dogs are welcome, provided you pick up after them in the yard.

What stayed with us most was the welcome. Odile is kind and attentive, often thinking ahead to what guests might need. Her restaurant tips were useful, and we enjoyed chatting after breakfast was finished. She makes a French espresso ristretto that may be the best in Occitania, and with a few more Italian guests it might even rival one back in Italy. That made us want to stay longer. We spent a couple of October nights here while touring Cathar castles and abbeys. The old abbey is close to the city but has its own character, away from Carcassonne’s disposable tourism. Shared spaces inside and out are generous, clean, and well looked after. The rooms feel a bit dated, especially the bathrooms, where the shower needs attention, and the mattresses could be better too. Thanks, Odile, from Marco & Sara.

The service was great, the rooms were nice, and the countryside is amazing. Beautiful place, and we’ll definitely come back.

Back here again this year. Such a peaceful place, and the pool is lovely.
