Breakfast and the service were the strongest parts of our stay. The buffet had lots of sweet and savoury choices, all excellent quality, and the service was impeccable. I don’t regret going, but I expected more from a four-star-plus hotel given the price. I’ve had more comfortable stays with better facilities at four-star places for less. I realise that may be different in Brixen, but some standards should be universal. We came to Brixen specifically for this historic hotel and its Michelin-starred restaurant. The location is wonderful, and the main building feels almost like a museum, full of history, art and furnishings. We stayed in a standard room in that building. It was clean but very basic, with a small, worn bathroom. Amenities were sparse: no shampoo or conditioner, just shower gel and body lotion. The spa was promoted heavily on the website, so I expected more. The sauna was small, and the dress code wasn’t clear, with some people nude and others dressed. The steam sauna was switched off. I was told there was water, but couldn’t find it, and there were no herbal teas, which many spas provide. The pool area and loungers were pleasant, and the pool was slightly heated. I didn’t like the fitness room. It was tiny, with very low vaulted ceilings, as if it might once have been a cellar, so it didn’t feel airy or comfortable. There was a treadmill, a bike, a bench and a few dumbbells, but it wasn’t a space where you’d want to exercise hard. There was no water or towels there either.

The Elephant Restaurant gave me one of the best meals I’ve had in a long time. I was sorry Apostelstube was closed, but the tagliatelle with spinach cream and white truffle, especially with extra truffle, was incredible. So was the roe deer saddle with chestnut cream, Brussels sprouts and black currant jus. I’ll remember those dishes for ages. I can’t recommend the restaurant enough.

Their communication is awful. They answer quickly when an inquiry suits them, then ignore messages about problems or refund requests. They said they were too busy with emails to respond to my urgent request, but replied within minutes once I mentioned writing a review. The service felt deeply unprofessional and unreliable.

The hotel has a quiet, convenient spot just off the main area, within easy walking distance of shops, restaurants, a pharmacy and a supermarket. Staff were welcoming and helpful, and the gorgeous bar and extraordinary pastry chef made it even better. Don’t miss the breakfast croissants, especially the light, airy one with chocolate sprinkled inside. It was superb. There are elephant details throughout, and the traditional style, elaborate artwork and antique furniture give the distinct rooms a special atmosphere. A charming, unusual place to stay.

We loved the restaurant’s creative introduction to the garden, with Soliman’s journey. Breakfast was generous, and the hotel is quietly placed right in the town centre, so it’s quick to get around on foot. I thought the hotel design could use a refresh. Still, the experience at the Apostle's restaurant was magnificent.
