The spa is modern, peaceful and beautifully designed, and every dish I tried was memorable. The pasta was the best I've ever had, a lovely mix of tradition and skill. The estate also has olive groves and vineyards, and the wine selection was remarkably deep and varied, among the best I've come across. They're considering private-label production, and given the quality, I'm seriously thinking about it for my own business. Ca’ Apollonio in Romano d’Ezzelino made a strong impression from the start, with elegant, timeless design, warm hospitality and attentive care. It's a refined mix of luxury, comfort and authenticity. It also seems to take sustainability seriously: the estate is 100% energy efficient and has received awards for its thoughtful use of natural resources. Construction materials came from factories within 30 kilometers, and even the bath products use local flowers and fragrances. Massimo Vallotto, the owner, deserves special thanks. His gracious manner, passion and eye for detail capture the spirit of the place and make the stay unforgettable. To me, Ca’ Apollonio brings luxury, sustainability and culture together. If you're visiting Romano d’Ezzelino, it's a must, and I look forward to returning.

The whole property is beautifully designed, with a modern, minimalist style. The food is great, the wine list is spot on, and the spa is world class. The staff are wonderful too. A truly exceptional place.

We came for a quick escape from Venice, just a short train ride away, and were welcomed with a lovely view of the hotel's vineyard. The friendly staff then showed us to the restaurant, where course after course was incredible. The meat tartare tasted very fresh and practically melted in our mouths. The team knew their stuff and helped us choose food and wine pairings. We talked, ate and drank in a way we hadn't experienced before. It's a wonderful place to visit and stay. I can't wait for the hotel to open so we can enjoy all the amenities, and we'll be back for more.

We had such a great birthday lunch. The steak tartare was delicious, and the wine list alone makes this worth a visit for a meal. The hotel grounds are divine, and the pastry chef even treated us to some sweet bites when we met. I can't wait for the hotel to open. We'll definitely come back.
