We found the private bath small, but the price was quite reasonable. The spa was clean and worked well, and the hotel sits pleasantly by the river. There weren't many guests while we were there, so breakfast was fairly modest, with limited choices.

The river view was beautiful, and I loved falling asleep to the sound of the water. My room was spacious, with tatami styling and generous amenities. The hotel itself is stunning, clean, classy, and contemporary, and the staff were incredibly friendly and accommodating. The best part for me was access to Nabeya's natural onsen. The water was excellent, and having a sauna was a great bonus. I'd only suggest adding more vegetarian and vegan options at breakfast and dinner. I'd definitely return and recommend staying here.

Dinner was the real surprise for us. It was our first Japanese Western-style onsen dinner, and my wife and I were impressed by the ingredients and the chef's French technique. The mushroom tart amuse-bouche had excellent texture, the fish was tender with crisp skin, and the main course was a top-quality cut of beef shoulder cooked medium rare. The cooking had a French style with traditional Japanese umami. Both the food and service felt Michelin-worthy. The onsen was very clean and new, with pure water that isn't diluted. At check-in, we were served welcome drinks, and the staff helped us while we enjoyed them. Their service was polite and warm. We chose a newly furnished Japanese Western-style room. It was very roomy, with a spectacular view of the Kuma River, and it was relaxing to hear the water flowing. It was also sad to see the destruction the river brought. This modern onsen hotel was newly renovated after the Kuma River flooding nearby. I definitely recommend Nabeya onsen when visiting Hitoyoshi, and I'd try the western-style menu again if I return.

The outdoor onsen was my favorite, and the view was amazing both in daylight and at night. Day spa admission was 800 yen for an adult.
