We only came to Merlet for dinner at the restaurant, not to stay at the hotel. It was an amazing evening, and the team made our birthday celebration feel special from the moment we arrived. They were warm and thoughtful, with the timing just right and no sense of intrusion. The service felt professional while still relaxed. Everyone was attentive and dynamic, and you could tell they enjoyed their work. There was no pretension, just real respect for local products and a clear passion for doing things well. Every dish was beautiful to look at and delicious, with precision and creativity coming through in each bite. The wine pairings were very well chosen for the courses. The jus and sauces stood out most, deep and refined, absolutely sublime. Honestly, the chef deserves three stars for those alone. And the cheese cart was unforgettable, the sort of thing you keep thinking about after the evening is over. We’ll be thinking about this experience for a long time.

We had a fantastic stay with family, kids, and business associates. The rooms were spacious, clean, and beautifully decorated, and the staff were so friendly and attentive that our whole group felt at home. The restaurant’s Dutch cuisine was outstanding. Fresh seafood and local specialties went beyond what we expected. It’s a great base for family outings, with easy access to the dunes, beaches, and bike trails around Schoorl. This is definitely the best place in this amazing town. We can’t wait to come back!

We had such a calm lunch at Hotel Merlet’s restaurant, surrounded by greenery. 🌿 The seasonal menu was amazing, with everything fresh and full of flavor. The staff were really friendly and helpful.

The dining room decor really caught my eye, and the location is beautiful. I arranged this 60th birthday getaway for a friend, including flowers in the room, and from the first booking right through check out, every staff member was professional, friendly, and helpful. The food and wine were excellent, a genuinely top quality dining experience. I can’t rate this place highly enough.

The terrace and views over the garden were beautiful and relaxing, and the space felt good overall. I wasn’t keen on the decor, which felt a bit tacky-modern Dutch. We went for lunch in January, and it was quiet and calm, with great service. The cooking at this 1 Michelin Star really impressed us. It was very, very good and solid all the way through. Definitely worth a visit.
