The rooms and restaurant are cared for down to the details, and the food portions are generous for the price. We tried several stuffed pastas, all very good, and the meatballs in pomodoro sauce were delicious. My children especially loved the crescentine with ham pesto. L'Emiliano also makes prosciutto crudo, coppa, culatello, and salami. The family has Italian roots and a real connection to that culture, following Emilia Romagna recipes and traditions, the founders' home region and the source of the name. It’s a welcoming hotel, restaurant, and ham and salami producer all in one. We’ll certainly come back when we get the chance.

The service could use improvement. I understand the pace may be slower than in bigger towns, but in a tourist area I’d expect to feel welcome, and the restaurant staff should help create that experience. They work with amazing ingredients, including real saffron and cream, but the results felt a bit lazy. Maybe there was a specific reason, but I wasn’t impressed with the food. They could easily get five stars.

The tagliatelle al nero di sepia were easily the best pasta choice. The food is authentic and delicious, and the copa and prosciutto on the pricey tablas are excellent. The cheese on them was pretty ordinary, though, without much flavor or texture. It’s a beautiful restaurant in the heart of Capitán Pastene, the "New Italy" of southern Chile. Service was friendly, but not very professional: the waitress missed some of our orders, and one dish came without an ingredient. They fixed that mistake quickly. I’d skip the risotto, since the rice seemed a little undercooked and they don’t seem to have mastered the technique.
