The HSTLR Burger is a bargain at £20, and that’s not something I say lightly. Making one at home would mean buying all the ingredients, putting in the time and skill, and dealing with the waste. You’d also have to make the reduced, intensely flavoured dipping sauce that comes with it. I don’t think you could do all that for less than the price here in Devizes marketplace. It tastes as good as it sounds. The beef patty and slow-cooked beef on top pack a lot of flavour, but the bun holds together and the burger is actually manageable to eat. Each bite gets a mix of the salt, fat, acidity, umami and sweetness, and the sauce lets you push those flavours further. If you’re used to an ordinary burger, this one might blow your mind. The fries are excellent too, and just right alongside it. I’ve tried plenty of the Black Swan’s small plates and starters, and they’re all fantastic. It’s hard to pick between them, so I’ve focused on this one dish. I’ve been back several times and the food has matched or slightly topped my previous visit each time. That kind of consistency is harder to find than it sounds. My one criticism is the spelling of “HSTLR”, which I assume is meant to be “hustler”. It would’ve annoyed my Nan, though she’s dead now! The best meal I can remember was also a burger. During lockdown I flew to Chattanooga, Tennessee, to meet a dying penpal for the first and last time. We were both smiling so much our cheeks hurt, with tears running down them, while the rest of the world was miserable. It was a vivid memory that pulled my emotions in both directions at once. This burger tastes better, luckily without the risk, sadness or plane ticket. It’s hiding in Devizes marketplace, ready to be eaten for £20.

That four-poster bed was beautiful, and we loved finding the little radio playing in the room. The rooms have been furnished and decorated with care; we also spent the evening having drinks in the exceptional residents’ lounge. Breakfast was very tasty. We stayed one night to meet family nearby and will definitely return. We were in room 7, beside the kitchen extractor fan. We could hear it, and opening the window brought in food smells. It was switched off overnight, so it didn’t disturb our sleep.

We had a brilliant meal, and the young team provided great service. Nothing about the experience gave us cause to complain. Thanks to Kev and the team. As a former Hotel Director who’s worked in Michelin-star properties, I’m glad to have a dining room this good just a short walk from home. The kitchen’s skill showed across our choices. We started with haggis croquettes, haddock arancini and spicy chicken wings, all full of flavour with good dips. Then came chicken schnitzel with roasted sriracha sprouts, duck-fat hash browns, buffalo sauce and buttermilk mayo. The pork chop was perfectly cooked, tender and still faintly pink, with silky pommes purée and grilled hispi with fennel. The rib eye had an excellent peppercorn sauce, crisp chips and a flavour-packed salad. We finished with treacle tart and an indulgent chocolate brownie. Can’t wait to return.

A lovely lunch in a beautiful pub. The food was nicely cooked, seasoned and presented, and we had starters, beef mains and dessert. Our young waiter was so sweet, attentive and aware, while never getting in the way. Service was five stars. The food cooled quickly because the plates hadn’t been heated. The ladies’ room could also use some heat and a new sink surround. Those were the only drawbacks.

The pub felt warm and inviting, the rooms were great, and the location couldn’t be more central. Breakfast was a special treat and the perfect end to a brilliant stay. We’d come for our mum’s birthday, and the staff helped make the surprise dinner a success. The room looked beautiful, the food was delicious, and we all had a memorable evening. Thanks so much!
