We started with a Larios Rosa Gin and Tonic at El Almacén Gastrobar, inside the historic Palacio de los Acevedo in Hoznayo, Cantabria. We would have stayed longer, but there was a wedding and no availability. The setting is a beautifully preserved baroque palace, with a charming terrace overlooking Plaza La Plaza. The atmosphere feels elegant but still welcoming, and the staff were friendly and polished throughout. Juan prepared the beef tartar tableside, with care and a bit of flair, and that personal touch made it a highlight. The meal had some excellent local ingredients, especially the fresh seafood and well-raised meats. The carpaccio de gambones was the star for me, thinly sliced prawns with olive oil and citrus, letting their sweet, briny flavour come through. The chipirones were crisp outside and tender inside, with a light garlic and parsley drizzle. Juan's beef tartar was finely chopped and seasoned with capers, Dijon mustard, egg yolk and lemon. It was rich and consistently flavourful. The carrilleras, braised beef cheeks, were very tender in a deep jus, served over smooth celeriac and potato purée. The ventresca de bonito was a delicate piece of tuna belly, lightly seared to keep its buttery texture, with a subtle citrus and soy emulsion. We had the 2020 white from Bodegas Martín Codax Arousa. Its crisp mineral character worked well with the richer tartar and carrilleras and brought out the freshness of the seafood. The floral aromas and acidity made it a thoughtful pairing. The cooking felt heartfelt and technically sound, particularly the carpaccio, chipirones and tartar. The presentation was refined, though not theatrical. A few dishes could use a sharper acidic note. It may not have the drama of a Michelin star, but it struck me as Bib-Gourmand quality, with careful cooking and a memorable historic setting.

We spent one night here, had dinner, and would happily recommend it. The hotel is beautiful and not far from Santander Airport, and our room was spacious and really nice. Dinner was delicious and reasonably priced, with helpful waiters. Breakfast was great too, with plenty of choices.

We had the place almost to ourselves for two nights, and the room was excellent and very spacious. Breakfast was great, and the courtyard is beautiful. I'm not sure why it was so inexpensive; I think it may mostly be used as a venue. Definitely recommend it.

The gastro bar is a lovely restaurant, and the food was exceptionally good for very reasonable prices. The staff were excellent as well. I can't rate it highly enough. If we're back in Cantabria, we'll definitely visit again.

Hoznayo is beautiful, but it's extremely isolated. Palacio de los Acevedo is a gorgeous, well-kept estate with classy rooms and an ambitious aesthetic. The surroundings are lovely, and the housekeepers were very polite. They were the only reason I could give it any stars, though. Service at both the hotel and El Almacen restaurant was among the worst I've experienced in all my travels. At Acevedos, employees never greet you. Anyone else you might encounter can be hostile or dismissive. Check-in is rigid and handled entirely through apps and web portals. If you arrive early, there's nobody to help with luggage storage. Even if you've arranged to arrive before check-in, you may end up sitting with your bags in their unmarked lobby, wondering about your life choices. As a place, it's wonderful. As a business, they seem to have no idea what hospitality means. At El Almacen, the wait staff wouldn't seat me, a party of one, even though the whole interior and another section of the restaurant were empty. From what I could gather with my limited Spanish, they didn't want to use a table for one person on a busy night when they might fill it with three or four. Unless you're completely fluent in Spanish, don't choose El Almacen. The staff at both places seem unaware that tourism brings in much of the hospitality business. They need people who can be patient with customers who aren't fluent in the local language. When someone takes a little longer to respond or doesn't have a local accent, staff shouldn't huff, puff or roll their eyes. Better service could help the long-term prospects of an otherwise beautiful estate and restaurant in a gorgeous town.
