The Zillers Boutique Hotel

I've eaten at one-, two-, and three-star Michelin restaurants in America, England, France, Germany, and Spain, and now in Greece, my home. Last night's meal was honestly one of the best I've ever had. The Acropolis and Parthenon were our backdrop as we sat down, and the first Amuse Bouche made it clear the evening would be special. Every course surprised and delighted me. Just when I thought one was the best, the next arrived and topped it. The presentation often looked like an impressionist painting. The ingredients were first class, and Chef's care in bringing them together was genius. It was a feast in every sense. Many Michelin-star meals have been good but left me feeling something was missing. Zillers brings together that expected level of excellence with world-famous Greek hospitality, which is rare. I'm proud to be Greek and to have this fine dining restaurant in my city, my home. Chef Vasilis Roussos, you, your kitchen, and your service staff are a gift to Greece and the food world. I'd be honored to meet you and learn how you created it. Thank you for an evening I'll never forget.

The rooftop view was outstanding, and when it started raining during dinner we stayed dry despite being on the patio. We had the 10-course tasting menu with wine pairing. The waitresses were lovely and gave us helpful explanations of the food and wines. I enjoyed the pairing, though not every wine was to my taste, so skipping it would be fine.

The view over the Acropolis is unreal and makes the whole evening feel special. We chose the Dine Athens menu with wine pairing, and everything we tried was amazing, refined, and beautifully presented. The sommelier picked excellent wines and explained each one in a thoughtful, engaging way. Service was attentive, kind, and professional throughout. Definitely worth the price for a special night in Athens, and I'd absolutely recommend it.

The food didn't make up for the rest of the evening. Having tried Michelin-starred places in several countries, I expected dishes with clear flavors and a well-judged progression. Some here lacked the balance and definition I've come to expect, with fewer moments where textures and flavors clicked. There is talent in the room, but the meal didn't consistently deliver the basics of fine dining. The pacing felt rushed. Another course arrived while we were still eating the appetizer, and when staff made room for it, they moved our personal things around. That small intrusion broke the moment and made us feel hurried. Later, the next dish had lost the temperature it seemed to rely on. It felt like the meal was being processed instead of enjoyed. Service also felt more scripted than sincere. Food check-ins seemed like part of a routine rather than genuine interest. Before and after the meal, we were asked a string of broad drink questions, alcohol or non-alcohol, then coffee or tea, without a drinks list in hand. It came across as trying to add to the bill rather than guide us through pairings. We came expecting the assured pacing and careful hospitality of a one-star kitchen. Instead, the experience was uneven, like a service machine running on a script. Fine dining doesn't need theatrics, but it does need control, gracious unhurried service, and a menu with a coherent voice. This place seemed to reach for the performance without consistently getting those fundamentals right.
