I Borghi dell'Eremo

We loved our stay at I Borghi dell'Eremo and would go back in a heartbeat. The property is gorgeous, the sunsets are magical, and everyone on staff was kind and helpful the whole time. Breakfast, lunch, and dinner were all fantastic, and we really enjoyed the spa too. Driving up, we felt like we were entering a different world. Our room was beautiful, and we appreciated the turndown service every night. Umbria felt like a hidden gem from here ❤️

We stayed in the 11th century abbey, a couple 100m further from the main hotel. Our room had wonderful amenities, and the spa inside was especially welcome on a rainy day. The private garden was peaceful and had great views. The staff were friendly, welcoming, and attentive. The on-site restaurant serves Michelin quality food without the fluff, with a wonderful view from the hilltop. We had such a relaxing, wonderful stay that we can’t stop thinking about it. 100% would recommend.

The location is stunning and very well kept, with huge, beautifully furnished rooms and excellent, kind staff. I’m taking off a star because I expected better restaurant service. The food was good and the staff were nice, but service was slow at times, and on other occasions they weren’t very attentive. Empty plates stayed on our table for quite a while. Given the prices at this resort and its listing in the Michelin guide, I expected more. I’ll still give it another try in the future.

The room, spa, and hotel were truly exceptional. Our room had lots of storage and so many lovely details, and the attentive staff and brilliant views make this a unique, stunning place in Umbria. Dinner was the letdown. Breakfast and lunch by the pool were very good, but the dinner food disappointed us, especially for the prices in this area. The dishes looked nice, but the Mille-feuille was really a variant of gratin dauphinois, and L’Uovo turned out to be a cold, hard egg yolk in crisp breading. Both starters were underwhelming and poorly executed. The same micro herb garnish and oils showed up across every dish, which felt strange. The Risotto came with an extremely acidic lemon sauce, and the two pieces of lamb were overcooked, dry, and somehow tasteless. We hoped the profiterole inspired dessert would be better, but the choux was dry and stale, and the dish was poorly executed again. We were thoroughly disappointed. At least two other sets of guests felt the same, one we overheard in the dining room and another who told us the next day. It’s quite simply the worst food we’ve ever had at a hotel restaurant of this class. The exceptional wine list and helpful staff were the saving grace. We love the hotel and would certainly return, but we’d eat outside next time. It’s quite a drive out, though we think it would be worth the effort. Dinner is the only reason for our 4* rather than 5* rating.
