The dinner was the star of our stay at FUKUMITSU HANAYAMA, a long-established onsen ryokan in Fukumitsu, Toyama known for its good food. Our meal began with a vegetable smoothie and seasonal autumn appetizers, including gingko nuts and sweet potato tempura. Then came BURI TATAKI, half-cooked yellowtail with mochi, and the yellowtail was exquisite. Crab fried rice had the flavor of crab all through it, followed by steamed sea bass in a slurry that tasted really good and reminded me of Chinese food. The sashimi included maguro tuna, sweet shrimp amaebi, firefly squid hotaru ika, and sea bass. We'd ordered the wagyu special, so there was wagyu steak salad with a tart dressing, radish purée, and spinach purée, plus shabu shabu with well-marbled beef. Cooking it in the konbu seaweed, umeboshi sour plum, and spring onion broth was fun. It came with mushrooms, leafy greens, sesame, ponzu, and salt ponzu dipping sauces, plus a spicy sauce if you wanted extra kick. Dessert was rich milky pannacotta and incredibly good apple sorbet. We also had a tasting menu of Toyama's best sake rice wine with the meal, which made the filling course even more substantial. There was all-you-can-drink miso soup in crab, red, and seafood flavors, all-you-can-eat rice, and a drink bar with apple and orange juice, oolong tea, roasted green tea, and coffee. The lobby also has free all-you-can-drink beer, juice, coffee, tea, milk, and amazake, along with ice pops. You can even book a room with an onsen hot spring on the balcony. Our waitress was attentive and charming. What a satisfying meal!
