The stars here were even better than at Big Bend, and the short hikes and time to relax on the property were just what I needed. I stayed two nights after Carlsbad Caverns, before heading to Big Bend NP. The setting is remote, so plan your meals ahead since the nearest towns are 40 minutes away. Breakfast was great, and lunch and dinner were delicious, though pricey. The accommodations felt rustic but were comfortable, clean, and relaxing. When I got a flat on the way in, the staff helped arrange for a mechanic to come out. I loved the staff and communal feel. Bike rentals would’ve been nice, though maybe there’s a liability issue.

The grounds are beautiful, and the spacious rooms are well appointed. We’ve stayed here 6-7 times over the years because it’s such a unique find, and the staff has always been friendly and professional. Coming back after several years, though, we were disappointed by the food and the noise from maintenance. They now charge separately for rooms and meals, and the meals have gone downhill. The vegetables with our polenta and lamb chop dinner were very good, but the lamb was cooked well done and gray, which was a letdown since it was the main part of the meal. Breakfast used to be great, with the best Huevos Rancheros I’ve had, several dishes to order, and buffet items too. Now it’s all buffet. We came about 30 minutes before breakfast ended and found dried, crusty leftovers, with some items gone entirely. At these prices, they should keep refreshing the food, even if some is left over. The french toast and hash browns were the worst. The french toast was a frozen, manufactured rectangle, and it tasted terrible. The hash browns were perfectly shaped Sysco rectangles, mealy and flavorless. For a better breakfast buffet, go to Holiday Inn Express. I understand that a property like this needs upkeep, but they should plan it differently. We came for peace and quiet, then at 8am, while my wife and I were reading by the lake, someone was using a leaf blower and a huge excavator was working on the hill behind us.

The birds and spectacular views make this a lovely spot for a quiet break from the city. With no light pollution, you can see the stars at night. There are walks, shooting guns, and good food to enjoy.

We had a family get together at Cibolo, and everything exceeded our expectations. The atmosphere, staff, and food were all over the top. It’s well worth the drive, and I’ll definitely make this a destination many times. If you want to see a historical ranch in Texas, this is the place to go.

The staff were wonderful, the food was fantastic, and the grounds were stunning. This place is truly special. Thank you for such a great end to our honeymoon. I can’t say enough positive things about our stay.
