Sitting at the chef's counter, we got to watch the wood-fired kitchen, which was a real treat. The steak had a unique, beautiful flavor from the wood and may be the best I've ever had. The vegetables were just as flavorful and elevated. Staff were attentive, and their excitement about the menu was infectious. The bartender was a talented mixologist, the cocktails were fantastic, and the wine list was small but impressive. I can't wait to come back after such a special night.

Reserve the Chef’s Table if you can. It costs an extra $15 per person, but I thought it was absolutely worth it. Madison, the chef, put together a thoughtful, memorable menu, and you can see how much Tyler and Ryan behind the grill care about what they do. Eric made us some of the best cocktails we've had in a long time. From beginning to end, the night felt personal, special, and fun. The team clearly takes pride in their work. We'll eat here again on future visits. We started with squash agnolotti, beef tataki, and wood fire carrots. Get the beef tataki, the fermented black garlic was amazing. The prawns were delicious, though they're no longer on the menu. The open-flame NY strip was amazing, even coming from a Texas girl. We saw other entrees going out, and the chicken and pork chop looked incredible too. For dessert, the chess pie was amazing. I've already forgotten the name of the raspberry ice cream dessert with honeycomb, but it was out of this world. They let us sample the chocolate dessert as well, and that was amazing too. Five stars, would highly recommend.

The place has just had a multi-million dollar renovation, and it shows. Nico was awesome. The ingredients are fresh and locally sourced, and the wood-fired pork was unmatched, the best I've ever had.

I spent a week at the Western over Christmas and had an incredible time. The restaurant and bar were exceptional, and the meals never disappointed. The bartender came up with some really unique drinks. My room was phenomenal, with a gas fireplace and an old-fashioned clawfoot tub that were great touches. The dedicated staff also impressed me with their service.

The renovated hotel looks amazing, and we’d love to stay here next time. Dinner was such a good experience too: the service was attentive, the cornbread was delicious, and we finished with the apple tart special. We both ordered steak, then realized one would’ve been enough, so we took the rest home. We each had a cocktail with gin, blackberry, lemon, and something rose in the name, though I can’t remember exactly what it was. Such a romantic atmosphere, and we loved the food.
