Cochem is probably the best-known town on the Moselle, and it gets packed with tourists in summer. I don't really see why. You can get around it in an hour, and it's mostly shops and restaurants with prices bumped up just because you're in Cochem 🤔. If you're looking for Moselle culture, Bernkastel and Traben-Trarbach are both worth a visit. I'd see Cochem once in the evening and then move on. Still, lots of fun 🥳.
