I was looking for the restaurant one afternoon, but really just wanted tapas. The bar had a friendly crowd of locals, so I had a beer and croquetas. Both were good, and the atmosphere was relaxed and cool. I'd come back, and would like to try the restaurant if I had more time.

The cochinillo's flavor really impressed me. In one bite the skin was crunchy and tender, with the fat separating away. The waiters were dressed like gentlemen and gave us wonderful, attentive service. I was seated at a table for lunch, but the lively bar area caught my eye. People were standing around, talking and having beers. Such a cool vibe!

We drove to Segovia just to eat at El Sitio, and it lived up to the trip. The suckling pig is still the same great dish, and after 60 years the restaurant hasn't changed. Service is elegant and professional, as it was back then, and the quality makes the prices good value. Highly recommended. Please keep it as it is, we'd love to return for the same meal. P.S. At around 2 pm, the place was packed, with diners spilling out into the street. It's clearly popular with locals. We finally made it for Sunday lunch, and were glad we did: mixed salad, ham croquettes, and pork in grandma's clay pot, plus drinks for two, came to under 40 euros. The atmosphere was lovely and the service friendly and efficient. Keep in mind the kitchen serves only from 1200 to 1630 and 2000 to 2330.

We got the chorizo and potato dish, which was my favorite, along with tortilla, salpicón, and croquetas. The salpicón was very good, though the croquetas didn't impress me, I've had better. The coffee was excellent too, and I'm sure the full menu is even better. The waiters didn't notice us right away, but once they realized we were new guests they paid more attention. They also offered us some broth from the Cochinillo they serve to warm us up, which was a nice touch.
