The beach service at Posada Sabbia by LD was the best on the island for us. Staff were attentive while we enjoyed Los Roques' clear turquoise water and white sand. The inn's team also kept everything spotless and welcoming. Geraldine Novoa and Claudia Puccini looked after housekeeping, and butlers Gregory Romero and Ramón Marcano were thoughtful and detail focused. Operations Manager Jose Dávila ran things smoothly. The meals were just as memorable. On March 13th, we had crispy langoustines with tangy passionfruit mayo, then tender chicken with tzatziki and romesco emulsion. Dinner also brought linguini al Limoncello criollo with shrimp, plus grilled tenderloin with potato purée and mushroom wine sauce. The previous evening began with white fish crudo, Nikkei sauce, and ceviche-style vegetables, followed by salad with goat cheese, almonds, and gastrique. For mains, there was octopus in smoky paprika and wine sauce with rustic potatoes and chimichurri, and tempura fish of the day alongside chaufa rice and creamy cashew sauce. Chef Abraham Hernandez created the dishes, with Sous Chef Leonardo Urbina supporting him. Bartender Carlos Maza's carefully made cocktails were a draw in their own right and complemented dinner beautifully. Between the food, caring staff, and attentive beach service, the stay captured what we love about Los Roques. Chef Abraham's cooking and the warmth of the team are both still on our minds, and we'd love to return.
